CHICKEN QUESADILLA RING

4 cups cooked chicken, shredded
1 1/3 cups Peach & Mango Habanero Salsa
2 Tbsp. Mexican Fiesta Rub & Seasoning
1 can black beans, drained and rinsed
6 cups Mexican cheese blend
12 large soft corn or flour tortillas
Honey BBQ Aioli Sauce (Retired) for dipping

Instructions

Preheat oven to 350°F. In a bowl, mix cooked chicken, salsa, seasoning and beans. Toss to coat everything evenly. Using a large pizza pan lined with parchment paper, place a wide mouth mason jar in the centre of the pan. Cut soft tortillas in half. Top tortilla halves with 3 tablespoons shredded cheese, followed by 2 tablespoons of the chicken mixture. Roll tortillas to form cones. Place 12 tortilla cones on pizza pan, around mason jar to form base row. The point of the cones should be touching the jar. Sprinkle with additional cheese. Repeat process to make 1 more layer. Remove jar from centre and place pan in the oven. Bake for 20 minutes or until the cheese has melted and the tortillas are golden.

To serve, fill a small bowl with Honey BBQ Aioli Sauce (Retired) and place in the centre of ring for dipping. Serve warm.
